We got tired of recipes that promised "15 minutes" and took forty-five, or called for six ingredients you'd only ever use once. So every recipe here gets cooked start to finish with a timer running before it's published — the times you see are the times we got.
We lean on color and vegetables because they taste good, not because a trend told us to. If a recipe needs a specialty ingredient, we say so up front, and we always suggest a normal-grocery-store swap.
